As a rule of thumb, "green" sprouts can be used as a nutrition, flavor and texture enhancer anywhere you might use lettuce (an old slogan of ours: "lettuce...only better"). Mung beans are used in a wide variety of Asian cuisines, and you will be safe throwing them in any stir fry.
Throw the legumes in almost any dish. Add more green sprouts than you think reasonable to a sandwich - they balance out the bread perfectly. Go outside and stuff your face with mung beans as a snack (it can get messy). And please let us know if you have a favorite sprout recipe so we can share with everyone!
